Marinate chicken overnight with italian dressing, dijon mustard and balsamic dressing. Flatten with mallet.
Cook quinoa hours before cooking. Make sure cools down. Add thyme, garlic salt and chili powder. Place quinoa on baking tray (we use a stoneware) and flatten out.

Bake at 300 F for 40 minutes. Mixing the quinoa every ten minutes. Take out of oven and let sit for 20 minutes.
Quinoa should be crispy and golden.

Dip chicken in egg, mustard and thyme mixture, then into quinoa and place on baking sheet (we use stoneware).
Place in oven for 25 minutes.
While chicken is in the oven make the balsamic dressing. We use balsamic, olive oil, salt, pepper, and dijon mustard.
Julianne apple, cut avocado and slice romaine.
